Honey and Almond Loaf

This smells delicious when baking! The recipe makes one loaf cooked in a 9″ x 5″ loaf tin.

Ingredients for Honey and Almond Loaf:

  • 1/2 cup liquid honey
  • 1 cup low-fat milk
  • 45 grams butter
  • 1/2 cup sugar
  • 1/2 teaspoon salt
  • 2 1/2 cups flour
  • 3 teaspoons baking powder
  • 1/2 cup sliced almonds
  • 1 egg

Method for Making the Honey and Almond Loaf

  1. Grease and flour loaf tin.
  2. Turn oven to 180 degrees Celsius.
  3. In a microwave-safe bowl, heat honey and milk on High for 1 minute. Stir well.
  4. Heat again for 30 seconds or until the honey has melted into the milk – the milk will look a pale brown colour.
  5. In a small microwave-safe dish, melt the butter on High for 30 seconds or until melted. Add to honey / milk mix. Let cool.
  6. In a large bowl, combine the sugar, salt, flour, baking powder and almonds. Mix well.
  7. Whisk an egg into the cooled honey / milk / butter mixture until all are well blended and frothy.
  8. Pour the liquid mix into the dry ingredients. Stir well until all are just combined – do not over mix.
  9. Bake in loaf tin for 1 hour at 180 degrees in the centre of the oven.

Walnut Bread

This recipe does not use yeast. It is more the texture of a cake but can be toasted when a couple of days old. Walnut Bread is not as sweet as Honey and Almond Loaf.

Ingredients for Walnut Bread:

  • 2 cups flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/3 cup sugar
  • 1 egg
  • 1 cup milk
  • 1/2 cup walnut pieces

Method for Making Walnut Bread

  1. Grease and flour a loaf tin.
  2. Turn oven to 170 degrees Celsius.
  3. In a large bowl, mix together the flour, baking powder, salt and sugar.
  4. In a small bowl or jug, whisk together the egg and milk.
  5. Stir into the dry ingredients.
  6. Stir in the walnuts.
  7. Bake in the loaf tin for 35 – 40 minutes at 170 degrees.

Once cooled after baking, the Honey and Almond Loaf and the Walnut Bread can be cut into slices and frozen successfully. Both these sweet nut loaves are delicious spread with a little butter or margarine. Enjoy them for afternoon tea or high tea.
