    Frumenty Pie

    3 cups frumenty
    1.5 lbs feta cheese
    salt and pepper to taste
    15 eggs
    1 cup olive oil
    1 lb phyllo dough sheets

    -Beat eggs and add to frumenty
    -Crumble feta with fork and add it to frumenty
    -Mix well
    -season
    -melt butter
    -Grease a baking pan
    -Line half the phyllo sheets, brushed with butter
    -Place frumenty on top
    -Place rest of sheets on top, brushed with butter
    -Fold sheets in side the pan
    -Baste pie with very small amount of water
    -Bake in medium oven about an hour

    Chicken Pie

    1 chicken
    5 chopped onions
    3 eggs
    1 cup grated cheese
    3/4 cup butter
    1 pack of phyllo
    1 tsp nutmeg
    salt and pepper

    -Cut chicken in pieces
    -Place them in pan, add 3 cups of water and bring to a boil
    -Add onions
    -Season
    -When done take out chicken and let the onions cook until the water becomes thick
    -Remove from heat
    -Debone chicken and cut into very small pieces
    -Put them back with the onions
    -Add cheese, eggs and nutmeg
    -Season
    -Mix well
    -Butter a baking pan
    -Place half the number of the phyllo leaves at the bottom, making sure that you sprinkle with melted butter each one after you place it in the pan
    -Place on top the chicken stuffing
    -Place on top the rest of the phyllo leaves, again sprinkling ith butter
    -Fold the ends of phyllo inwards
    -Cut pie into individual servings
    -Sprinkle with butter and water
    -Bake in medium heat for half an hour

    Small Cheese Pies

    1 egg
    1 cup sunflower oil
    1/2 tsp sugar
    1 tsp salt
    1 glass of milk
    2 tsp dry yeast
    5 cups of flour
    1 stick of butter cut in small pieces
    1 lb feta cheese
    2 egs
    1 tsp pepper
    1 egg with 1 tbs water, beaten

    -Mix all ingredients together, up to the butter and make the dough
    -Divide in 9 equal pieces
    -With the rolling pin make thin rectangular sheets and cut into bite size pies
    -Crumble feta cheese with a fork
    -Beat the eggs and add to feta cheese
    -Season and mix well
    -Butter a baking pan
    -In every small pie put some cheese stuffing and fold
    -Push with your fingers and seal
    -Place in baking pan
    -Brush with the beaten egg
    -Bake in medium heat for 30 to 45 minutes
